this soup basically made itself and I'm obsessed

Right so I had half a butternut squash going soft in the wicker basket, a sad looking leek, and some red lentils I've been meaning to use since basically September. Threw it all in a pot with stock and a bit of cumin and honestly wasn't expecting much. It's really good though. Like properly warming, the kind where you eat a bowl and feel sorted for the afternoon. I blended half of it and left the rest chunky which I think is the move — gives it a bit of texture rather than just being wallpaper paste. Added a tiny squeeze of lemon at the end which I nearly didn't bother with but it makes a difference tbh. Dead simple, took maybe 35 minutes, and nothing went in the bin. Autumn is the one season I'm actually grateful for veg.

the protein from the lentils actually slaps for recovery if you have it after a session

the lentils + squash combo is decent carb load actually, I'd probably have this the night before a long run

half blended is definitely the move, I do the same with lentil soup before a long run
