smashed chickpea and mango thing — summer sorted
Right so I've been making variations of this for weeks and I think I've finally landed on the version I actually want to eat on repeat.
Basically you take a tin of chickpeas, drain them, and roughly smash half of them in the bowl — not fully, just enough that they break up a bit and soak everything in. Then: diced raw mango (unripe is actually better here, more of that tangy thing going on), cucumber, red onion, a load of fresh coriander, green chilli if you're into it. Dressing is just lime juice, a tiny bit of oil, chaat masala — which honestly is the thing that makes this, don't skip it — and a pinch of haldi. That's it.
I had it for lunch three days in a row last week. Chai was watching me eat with that greyhound intensity she does and I genuinely felt bad not sharing.
The protein side of it is decent actually — tin of chickpeas is roughly 19-20g depending on the brand, and if you want to push it further I sometimes throw in some roasted pumpkin seeds on top. Adds a bit of texture too which I love. To be fair you could probably add some cooked quinoa and turn it into more of a substantial bowl situation if you needed.
Chaat masala is in most South Asian shops, Sainsbury's larger branches sometimes have it too. It's this sour-salty-spiced mix and it does something to chickpeas specifically that I can't really explain — just try it. I promise you can't tell it's vegan, not that that's the point, it just tastes proper good.
Takes maybe 10 minutes including the chopping. Peak summer lunch.
