root veg stew that basically made itself
Right so this was genuinely just clearing out the bottom of my veg drawer situation. Parsnip that had seen better days, half a swede, some sad looking carrots and a leek that was absolutely on its way out.
Chucked it all in with a tin of tomatoes, a load of smoked paprika, some thyme (dried, obviously, it's not that kind of week) and enough stock to cover. Left it on low for maybe 45 minutes while I answered emails.
Honestly? One of the better things I've made recently. The swede goes almost silky when it cooks that long, which I did not expect. Added a tin of butter beans near the end cos I wanted it to actually fill me up and that was the right call.
Roughly chop whatever root veg you've got — parsnip, swede, carrot, turnip, doesn't really matter. Fry an onion and some garlic first if you can be bothered. Tin of tomatoes + stock + smoked paprika + thyme. Simmer until everything's soft, like 40 mins. Butter beans or any white bean at the end. Crusty bread is non-negotiable tbh.
The smoked paprika does a lot of heavy lifting here. Don't skip it.
