roasted strawberry and quinoa thing — hear me out

Roasting strawberries sounds like a faff but honestly it takes like 12 minutes and they go all jammy and almost savoury? Hard to explain. I chucked them in with a tiny bit of olive oil and balsamic and that was it. Made this for lunch yesterday — quinoa base (cooked and cooled, important), roasted strawberries, thinly sliced cucumber, some rocket, and crumbled feta on top. The contrast is doing a lot of heavy lifting. Cold quinoa, warm-ish berries, salty feta. I wasn't sure it was going to work right up until I ate it and then I had the rest of it standing over the counter because I couldn't be bothered to sit down again. Dressing was just lemon juice, olive oil, a bit of honey, salt. Nothing clever. To be fair I nearly added tahini but I think that would've been too much going on. - 1 cup cooked quinoa (cooled) - ~150g strawberries, halved, roasted at 200°C for 10-12 min with a drizzle of olive oil + balsamic - half a cucumber, sliced thin - good handful of rocket - feta, as much as you want tbh - dressing: lemon, olive oil, honey, salt It's properly summer in a bowl. Feels substantial enough that I'm not rummaging through the kitchen an hour later, which is the actual test.

mint leaves do something weird and good with roasted strawberries if you've not tried it

does the quinoa hold up alright if you make it the night before? asking for meal prep reasons
