peanut noodles with whatever veg is sad in your fridge

Right so I had about 20 minutes and half a courgette looking sorry for itself. Soba noodles, that courgette, some spinach I needed to use before it turned, and a sauce made from peanut butter, soy, a bit of rice vinegar and chilli flakes. That's basically it. The sauce takes longer to describe than to make. Two tablespoons of peanut butter, splash of soy, splash of vinegar, hot water to loosen it, done. Noodles take 4 minutes. Chuck the veg in the same pan for the last 2 minutes so you're not washing anything extra up. Honestly it tastes like something you'd pay £11 for at some place with exposed lightbulbs. Costs about 90p. I've made it three times in two weeks and I'm not sick of it yet which by my standards means it's a keeper.

the sad veg drawer meals always hit different somehow

right? I've started doing this with noodles specifically, somehow works better than when I actually plan it

the desperation meals are genuinely the best ones, something about using what's left makes you actually think
