cucumber noodle thing — sounds fussy, isn't
Right so I've already done the watermelon feta thing this week so I wasn't going to post another salad but here we are.
Basically spiralised a cucumber — or just use a peeler and make ribbons, I'm not precious about it — then chucked it with some cooked cold vermicelli noodles, a handful of edamame I found in the freezer, and thinly sliced radish. The dressing is just soy sauce, a wee bit of sesame oil, rice vinegar, tiny bit of honey and some grated ginger. That's it.
Served it cold straight from the fridge. On a Saturday in Edinburgh where it was somehow 19 degrees and felt like the Mediterranean. Kirsty says she'd have it every day. Alfie looked at it like I'd put a plate of soil in front of him. Isla ate the noodles and declared victory.
Difficulty level: found the edamame, remembered we had sesame oil
Total time maybe 15 minutes including the bit where I couldn't find the grater.
