butternut and lentil soup — dead simple, pure filling

Made this last night and honestly didn't expect it to hit the way it did. It's just soup but the macros on it are actually mental. Right so basically I had half a butternut squash sitting there, some red lentils, a leek, and I thought I'd just throw it all in and see what happened. Fried off the leek in a bit of olive oil, added garlic, cumin, smoked paprika. Chucked in the squash cut into rough chunks, rinsed lentils, vegetable stock. Lid on, about 25 minutes. Blended maybe two thirds of it so it's thick but still has a bit of texture — I can't be doing with fully smooth soup, it feels like baby food to me. The lentils do a lot of the heavy lifting protein-wise. Not loads, to be fair, like it's not a chicken breast, but for a soup it's decent. I added a scoop of unflavoured whey when I blended it which sounds mad but you genuinely can't taste it and it bumps the protein up without changing anything. Served it with a couple of oatcakes on the side. Rough macros per big bowl (approx): - Cals: ~320 - Protein: ~22g (with the whey) - Carbs: ~38g - Fat: ~6g It's the kind of thing that keeps you going on a cold night without feeling heavy. Genuinely surprised myself with this one. Will be making a big batch on Sunday for the week.
