blended salad sounds wrong but stay with me
Right so I know the category says healthy recipes and I know I always go liquid but honestly this one sits right on the line and I'm counting it.
Basically I had a load of cucumber, some leftover mint from something I made dreckly last week, half a bag of peas that needed using, and a lime looking a bit sad on the counter. And I thought — this is either going to be a thing or it's going to the bin. So I blended the peas with a bit of water and some sea salt until it was almost like a cold soup base, then left it quite thick. Poured it into the bowl. Then on top I just put thinly sliced cucumber, torn mint, a squeeze of lime, and a bit of Greek yogurt dropped in. Little drizzle of olive oil. Job done.
It's cold, it's dead fresh, it took maybe eight minutes. The pea base goes this proper ansome bright green colour which genuinely made me happy. I added some whey to mine because I had a session earlier and needed protein but you really don't have to, it doesn't change the taste much, just makes it a bit more substantial.
I've made it twice now. Second time I threw in some crumbled feta on top which was a proper job decision tbh. I mean it's not exactly a recipe, more like — things I had, blended one of them, assembled the rest. But it works for me, especially after being out in the sun all morning. Feels light but you're not starving an hour later.
